Fast Fixes: Lemon-Poppy Seed Waffles

This Mother’s Day, start the day’s festivities off right by preparing your mom breakfast. Whip up Lemon-Poppy Seed Waffles with Blueberry Sauce, courtesy of The Little Rooster Cafe in Manchester Center, Vermont.

The tangy lemon peel and the satisfying crunchiness of the poppy seeds in these light-as-air waffles contrast perfectly with the sweet blueberry sauce. Serve with a mug of just-brewed coffee or a glass of your mother’s favorite fruit juice.

Not only will you impress her with your restaurant-caliber cooking skills, but you’ll score points with her for thoughtfulness, too!

Note: If you want to save time that morning, prepare the sauce the day before, then rewarm it over medium-low heat before serving.
